Vinification
The harvest is exclusively handpicked
between the last week of September and the
first week of October. Fermentation takes 15-
20 days in stainless steel vats at controlled
temperature with frequent pumping over. The
wine is aged in oak barrels for 24 months
and then a further maturation in bottle for at
least 4 months.
Description
Intense ruby red that assumes garnet glares
with the aging. Intense and typical bouquet
with flavour of mature berries and hints of
spices. In the mouth, it is complex, dry,
warm, slightly tannic, very well structured
and harmonic
Food pairing
Excellent with red meats and game and mature
cheeses
