bottles annual production. Although the Jean family have
been at Château Trimoulet since 1802, a woman is in charge of
this Saint-Emilion Grand Cru for the first time: Cécile Jean,
thirty five-year-old, ably assisted by her husband, David
Dumont
Vines Area
17 ha. Location: Saint-Emilion North hills. Vine density: 6 500
plants/ha. Average age of the vines : 25 years old. Blending: 75 %
merlot, 25 % cabernet franc.
Terrior
Sandy and clay, Harvest Merlots: October, 2 to 10, 2013. Cabernets
francs: October 11, 2013 Manual picking. Sorted table: 6 people.
VINIFICATION
Vinification in fonction of the soil. Skin extraction decided upon on
wine tasting. Total stay in the vats of 30 days. Malolactique
fermentation in tank.
AGEING
12 months in oak barrels. Put in barrels November 4, 2013 50 %
barrels and 50% vats
PRODUCTION
Bottling: July, 29, 2015 Yield: 45 hl/ha. 37 000 bottles
