酒廠1897年建於斯貝賽的「神秘百慕達三角洲」，此區被稱為Foggie Moss，自古就以水源純淨以及纏綿迷霧著稱，長滿了金雀花、石楠花可濾淨水源，且因為水氣因此經常霧鎖酒廠，增添幾分神秘感。酒廠不使用泥煤，只取麥芽最純粹的味道，一直是行家的選擇。
但經歷世界第一次大戰後因麥芽短缺而關門，後來由John Dewar and sons於1923年重新買下來開始營運，但之後又經歷易手，最終又回到Dewar手上，酒液蒸餾後主要用作製作Dewars Blended Whisky 的基酒，直到2004年再次出產12年版本。
雅墨威士忌產量低，且原酒常供不應求，百年來僅有少數的限量版與獨立裝瓶廠曾推出雅墨單一純麥威士忌。即便在蘇格蘭當地也僅能在少數酒吧尋獲，堪稱威士忌中的琴酒。
酒廠建於speyside，但卻比較偏遠的地區，為的，是可以在好的水源附近。他們的水源來自一片神秘之地Foggie Moss，充滿濃霧的地方，據說他們看中這裡的水質夠清純，亦特別選取12種Top Class麥芽的其中一種來造酒，亦沒有經過泥煤烘烤，確保清純的口感，令他們的威士忌都帶著一種花香的感覺。
品飲Aultmore 18年，猶如漫步蘇格蘭山野間，與山林的高低起伏一般的香氣裡，感受到香蕉、西洋梨等香味如同迷霧般迎面而來。
餘韻就像蘇格蘭甜點一般，香甜、充滿香料的迷人香氣慢慢浮現，觸動味蕾與嗅覺。口感順滑也是其特點。
John Dewar＆Sons的Last Great Malts系列的一部分，18年的Aultmore於2015年推出。
Aultmore distillery was founded in 1897 by Alexander Edward, one of Scotland’s best-known distillers, during the peak of the late-Victorian whisky boom. Supplied to the big blending houses of the day, AULTMORE single malt’s popularity with them gave rise to the distillery’s success, having drawn great admiration for the smoothness of its spirit. In fact, its qualities are so fine and well-balanced that it was soon one of just a few single malts rated ‘Top Class’ by industry experts.
18 years old Aultmore launched in 2015 as part of John Dewar & Sons’ Last Great Malts ranges. This single malt whisky from Speyside is aged for 18 years in American white oak casks and bottled at 46% ABV. It is evocative of ethereal summer nights where the air is filled with aromas of rosemary and olive olive.
