Sparkling wine produced in France. The selection of base wines is made among different grape varieties and depending on the vintage characteristics, in order to obtain the desired style.

The Charmat method (or closed tank) is a fermentation in tanks which turns ? quiet ? wines into sparkling wines. The name comes from its founder Jean-Eugène Charmat (1907). This method is quite similar to the Champagne method. The main difference is that the second fermentation takes place in a vat under pressure. The fermentation is thermo-regulated at 13°C to preserve the freshness of the wine and lasts at least 3 weeks. The pressure must attain 5 bars. Then, it is stopped by cooling down at -3°C.
