Terroir

Sparkling wine produced in France. The selection of base wines is made among different grape varieties and depending on the vintage characteristics, in order to obtain the desired style.

Elaboration

The Charmat method (or closed tank) is a fermentation in tanks which turns ? quiet ? wines into sparkling wines. The name comes from its founder Jean-Eugène Charmat (1907). This method is quite similar to the Champagne method. The main difference is that the second fermentation takes place in a vat under pressure. The fermentation is thermo-regulated at 13°C to preserve the freshness of the wine and lasts at least 3 weeks. The pressure must attain 5 bars. Then, it is stopped by cooling down at -3°C.

Tasting notes

Colour Nice pale shiny golden color with fine and delicate bubbles. Nose Aromas of peach, lemon and elderflower, with hints of hazelnuts and fresh butter. Palate The mouth is well balanced and fresh, with citrus notes and light bubbles. A clean fresh attack.

Wines & Food Pairing

To be served at 6 to 8°C, this wine will be perfect with aperitif, fishes but also with desserts and fruits.
